Kimbab Recipe
Kimbab is a Korean version of sushi without the raw fish. Rice is spread thinly on a cover of laver (seaweed) and topped with stir-fried vegetables, meat and egg. With the fillings in place at the center, it is then carefully rolled to create a sushi enfold. With the roll in place, it is then cut into slices. This dish is great picnic food!INGREDIENTS:2 cups uncooked rice1/2 pound lean beef, pork or chicken, thinly sliced1 1/2 teaspoon sesame oil1 carrot, thinly sliced4 eggs, beaten1 cup fresh spinach10 full-sized sheets of laverPREPARATION: Cook short-grain rice in water according to include instructions. Heat sesame unguent in large skillet all over medium-high heat. Stir-fry beef for 5 minutes, or until done. Place beef in a separate dish. Using the same skillet, lightly sauté carrots in 1/2 teaspoon sesame oil for 5 minutes, and set aside. Pan-fry beaten egg until set at the bottom, and then flip. Repeat as necessary, and mark aside until cool. Stack fried eggs, and cut into thin stripes. Bring 4 cups of water to a boil in a medium pot. Cook spinach in boiling water because of five minutes, or until immersed green. Rinse in cold water, drain, and squeeze spinach dry. Place one sheet of laver on a bamboo mat. Carefully spread the bottom half of the laver sheet with a thin layer of rice, and continue to layer with strips of beef, carrot, egg, and pieces of spinach. Lift the end of the mat, and gently roll the rice and laver around the fillings, making sure it’s tight. Roll it forward to make a superb roll. Seal the roll by moistening the outer edge of the laver sheet. Dip a knife into some water, and gently cut the spin furl into one-inch slices. Makes 4 servings.
